WHO says no to cinnamon buns with an extra nutritious and delicious bonus?
Those buns are crowd pleasers quite clearly. And isn’t sharing the greatest joy? Imagine you have friends over, you gather around a table and of course the perfect ‘warm – fresh out of the oven’ pumpkin buns are there in the center of attention. Waiting to be pulled apart ( This is actually the best part, right?) and savored.
Pumpkin, cinnamon and apple cider vinegar are all regulating our blood sugar levels, are high in antioxidants, essential vitamines and minerals. Pretty sweet that you can have it all while eating a yummy cinnamon roll. And let’s be honest, winter and holiday season are about enjoying sweet food / people / hugs. Let’s get rolling!
VEGAN PUMPKIN CINNAMON BUNS w/ MAPLE YOGURT GLAZE
makes 10 buns
The ingredient list is long and so is the instrucion. But it is basically just a dough, a filling and a glaze. To be created in that order, no fancy equipment needed. Just your hands, a bowl, an oven, a pumpkin and looots of cinnamon. Maybe one or two friends to help you roll and cut the buns & be patient while waiting for them to rise and get done.
Could be done easily if you happen to have some pumpkin puree left, maybe from making this granola or the pumpkin butter . Got some roasted/cooked squash in the kitchen? Blend it and there you go. But even without having ready pumpkin puree it is a fun and finger licking yummy activity to whip it up. Just roast the squash for 30 minutes with coconut oil on 200°F, then blend until buttery.
2 cups light spelt flour 300g Dinkelmehl Type 630
1 packet dry active yeast 1 Packet Trockenhefe
2 tbsp coconut sugar 2 EL Kokosblütenzucker
1 tsp sea salt 1 TL Meersalz
¾ cup pumpkin butter 175ml Kürbismus
1/4 cup almond milk 60ml Mandelmilch
1 tbsp apple cider vinegar 1 EL Apfelessig
3 tbsp coconut oil 3 EL Kokosöl
1/4 cup pumpkin butter 60ml Kürbismus
4 tbsp maple syrup 4 EL Ahornsirup
1/2 cup coconut sugar 100ml Kokosblütenzucker
1 tbsp vanilla extract 1 EL Vanille Extrakt
3 tbsp pumpkin spice ( cinnamon, cardamom, ginger, clove) 3 EL Kürbis Gewürz
¼ tsp sea salt ¼ TL Meersalz
1 cup yogurt of your choice 1 kleiner Becher Joghurt deiner Wahl
2 tbsp maple syrup 2 EL Ahornsirup
1 tbsp lemon juice 1 EL Zitronensaft
one handful pomegranate seeds Eine Handvoll Granatapfelkerne
